Rice Noodle Jars

Swap out your boring salami and cheese sandwich with these fun and economical lunch jars that are prepped and ready to go in less than 10 minutes.




INGREDIENTS (for one jar):

  • 1 tsp chicken base

  • 1 tsp massa de pimentao or gochujang

  • 2 tsp piri piri hot sauce or siracha

  • 1 tsp white wine vinegar

  • 1 tsp sesame oil

  • 1 tsp low sodium soy sauce

  • 1/4 c everything bagel seasoning

  • 1/4 c edamame

  • 1/3 c rotisserie chicken

  • 1/3 c Asian salad mix (mine has cilantro, savoy cabbage, green cabbage, carrot, celery, green onion)

  • 1 green onion, fine slice

  • 2 oz rice noodles A.K.A. vermicelli (1/4 of an 8oz bag)

  • about 1.5 - 2 c boiling water, when ready to serve


Add chicken base, massa de pimentao, piri piri, sesame oil, soy sauce and everything bagel seasoning to the bottom of the meal prep container. Add chicken, edamame, salad, onion, and noodles on top. Cover with airtight lid and keep in the fridge until ready to use.


When ready to serve, remove from fridge and pour boiling water directly over the food. Stir well for about 2 minutes.


Prep time = 3 minutes   |   Cook time = 1 minute   |   Serves 1


Tips:

  1. If you're not into spicy food, adjust the amount of hot sauce you use. You can use as little as 1/8 tsp!

  2. You can store these in the fridge for up to a week.

  3. Other add-in suggestions:

    1. nori

    2. fish cake

    3. jammy egg

    4. kimchi

  4. If you are using a tall container, make sure you have a tool (chop stick, perhaps) that can reach all the way to the bottom to stir the ingredients well and distribute evenly in the water.
