Spiced Apple Pie Filling

INGREDIENTS:

  • 8 medium baking apples peeled, sliced, and cored (939 g)

  • 1 c (150 g) white sugar

  • Zest and juice of one lemon (47 g)

  • 1/4 tsp ground clove

  • 1/2 tsp ground allspice

  • 1/8 tsp ground ginger

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 3 bay leaves

  • 1/4 tsp star anise extract

  • 1/2 tsp vanilla extract

  • 3 tsp water

  • 3/4 tsp corn starch


Add all ingredients to a dutch oven or sauce pan. Set on medium heat and cover. Stir occasionally. Mixture will become more liquidy as the apples release more of their juices. When gently boiling. Remove lid and stir until the liquid is thickened to a syrup consistency. Use immedeately in pie recipe or store in a container.


Prep time = 10 min   |   Cook time = 10-15 minutes   |   Makes about 4 cups of filling


Tips:

  1. Not all apples are for baking. Don't just get what is on sale. Do a quick search on your cell phone to se if the apple species is good for baking. In this photo above, I used pink lady apples, though I also like jonagold.
