This is for the ones who have a...difficult relationship with baking. The apple pandowdy is elegant and delicious and not very stressful, espeically if you are using store-bought ingredients.
What is a pandowdy?
It's a fruit filling baked with crust on the top but not on the bottom. You may be thinking, "that it's just a cobbler," but the technique is different. What makes this dish a pandowdy is pressing on the crust halfway through baking to encourage the juices to flow over the top. Don't stress - it doesn't get soggy. The high sugar content in the filling is going to encourage browning.
Can I make a pandowdy with store-bought ingredients?
Of course. You can replace the homemade pie crust for 1 9-inch pie crust, and swap the homemade pie filling for the same amount in the ingredient list.
INGREDIENTS:
1 egg + 1 tbsp water
1/2 tbsp turbinado cane sugar
For the homemade pie crust
1 c all purpose flour
5 tbsp butter, very cold, cut into pieces
1 tsp sugar
1/8 tsp salt
3 tbsp sour cream
3 tbsp very cold water
1/2 tbsp cold vinegar or vodka
For the filling
3 cups apple pie filling
In a food processor, combine flour, butter, sugar, and salt together until roughtly incorporated. Add the sour cream, water, and vodka and pulse until shaggy. Pour out on to a floured surface and work into a disk. Wrap in plastic and set aside in the fridge to rest for at least 10 minutes. Preheat oven to 440 F. Prepare your apple pie filling in a 9" fry pan and cook as per the instructions. Roll crust dough on a floured surface until roughtly 10"-13" wide. Usining a butter knife or a pizza cutter, cut into several large pieces. Layer over the surface of the apple filling. The pieces can over lap at the edges. It should cover the top with some holes peaking through. Beat egg and water together in a dish and brush over the top of the dough. Place immediately on the middle or top rack the oven. Lower temperature to 420 F, and bake for 10 minutes. Remove from the oven. The top should be a little yellow. With the back of a spoon or a spatula, press down on the dough to bring the juices from the filling to the top. Repeat multiple times until the top is covered witht the syrup. Sprinkle with the turbinado sugar and return to the oven to bake for 18 minutes, or until the top is a deep golden brown color. Remove from oven and let it cool and set for at least 10 minutes. Enjoy!
