Ooey Gooey Chewy Brownies

Fact: these are the ooeist, the gooiest, and the chewiest brownies you will have EVER had in your life. I was so pleased with the end result of this recipe and so was everyone else. They are very rich but not overwhelmingly sweet. I did this by using very dark 82% dark chocolate chips, as they are very rich in their chocolate flavor with less sugar than milk or semisweet chocolate. Something to keep in mind: dark chocolate is typically chocolate that is at least 50% cacao, which leaves a lot of variability in the taste and texture of your bake. I was very pleased with a bitter 82% chocolate, but you can adjust for how much your blood sugar can tollerate. The chewiness comes from only using brown sugar instead of granulated sugar.


There is a secret ingredient....port wine. Yes, I put Portugal's crown jewel into what is arguably the most quintesentially American dessert ever. It's not a boozy recipe, but the port just hangs out in the backgroundI to amplify that rich chocolate flavor and add a unique twist that will make people say, "huh, what's in these" (or at least that's what my dad said when he had them). Port is a sweet full-bodied dessert wine. There's three kinds but I only every buy the tawny kind. Since moving to the Midwest, I've learned that port is a little hard to come by, so you can substitute it for another sweet red. I love this brownie recipe so much. I'm convinced that it can convert "cake" brownie loyalists in one bite.




INGREDIENTS:

  • 10 oz dark chocolate

  • 10 tbsp unsalted butter, room temperature

  • 11/2 cups light brown sugar

  • 2 large eggs, room temperature

  • 1 tsp vanilla extract

  • 1/4 c port wine or sweet red wine

  • 1/2 tsp salt

  • 1/2 c all purpose flour


Preheat oven to 350. If chocolate is in a bar, cut into small chunks with a knife. Add butter and chocolate to a small sauce pan. Heat over low heat, stirring occassionally, until butter and chocolate are just melted. To a mixing bowl, add brown sugar. Pour chocolate-butter mixture over brown sugar and bring together with a whisk. The mixture will be grainy. Add eggs to bowl and mix until well combined. Add vanilla and wine and mix. Sift in flour and salt. Bring together until well incorporated. Grease an 8"x8" baking dish with butter. Pour mixture into baking dish and spread even. Bake in middle or bottom rack for 50-55 minutes. Let set for at least 3 hours or preferably overnight before serving.


Prep time = 20 min   |   Cook time = 50-55 minutes   |   Makes an 8"x8" sheet of brownies.





Tips:

  1. This is a very wet batter that takes a while to set. It may look underdone in the middle even after a nearly one hour long stint in the oven, but it's not. They are going to fall apart and be mushy if cut too soon. I personally feel they taste better the next day after they have had a chance to set overnight.
