One Pot "Marry Me" Chicken and Orzo Skillet


Who needs a spouse when this dish will make you swoon? One pot, endless flavors, a lifetime of happiness. Meet your new partner in crime: the One Pot "Marry Me" Chicken and Orzo Skillet. It's ready to be there for you through life's thicks and thins. It's' savory with a little touch of spice. Perfect for entertaining or weeknight dinners.


INGREDIENTS:

For the chicken

  • 4-5 chicken drumsticks, skin on

  • 1/2 tsp salt

  • 1/4 tsp ground mustard

  • 1/4 tsp chipotle chili

  • 1/4 tsp oregano

  • 1/4 tsp smoked paprika

  • 1/4 tsp garlic powder

  • 1-2 tbsp avocado or canola oil

For the veg and pasta

  • 1-2 tbsp avocado or canola oil

  • 1/2 onion, diced

  • 2 large carrots or parsnips, chopped

  • salt and pepper to taste

  • 1/2 c orzo/acini de pepe

  • 1/2 c white wine

  • 1 cup water or chicken/veggie/turkey stock

  • 1 tsp chicken/turkey/veggie base (if using water)

  • 2 small or 1 large bay leaf


Clean and pat chicken dry. In a dish, combine, salt, mustard, chipotle chili, oregano, paprika, and garlic powder together. From a height of 6-12 inches, sprinkle the seasoning mix on the chicken, being sure to get under the skin. Set aside at least 10 min to marinade or overnight in the fridge. Set oven to 350 degrees F. Set a pot on to medium-high (7/10) heat over stove. Add oil. Place chicken skin side down to sear 1-3 min or until brown. Repeat on all sides. Remove chicken from heat and set aside.


Reduce heat to medium. Add carrots/parsnips and onion to the pot. Add salt and pepper to taste. Cover and let cook about 3-5 min or until the veggies have some color on them. Add orzo/acini de pepe to the pot to toast, about 3 minutes. Add white wine and deglaze pan, making sure to release the fond (the browned bits at the bottom of the pan) from the bottom. When wine is at least 50% reduced, add water and chicken base and bay leaves. Add the chicken back in the pot, with the smaller pieces in the middle and the larger pieces on the outside for even cooking.


Cover pot and place in the oven for 35 min or until chicken has an internal temperature of 170. Enjoy!


Tips:

  1. Serve with a delicious gremolata for some brightness against the warming spices.

  2. An arugula salad with a simple vinaigrette would pair wonderfully with this dish.

  3. This dish can also work with leg quarters or thighs!

  4. If serving a larger crowd, you can multiply the recipe (obviously) and pour the veggie/pasta mixture into a large casserole dish before baking. You can also use an aluminum baking tray, but make sure it will fit on a cookie sheet for easy moving and cover with a sheet of foil.
