Brown Sugar Cinnamon Pop-Tarts

I've been rewatching Gilmore Girls this fall (I know, I'm so basic), and I was reminded how much Rory and Lorelai love their Pop-Tarts. So, naturally, I decided to make my own, but even better. These nostaligic little toaster treats are surprisingly easy to make! I've been wanting to do this recipe for a while, and I'm so happy with the results. I can say with confidence that there are many more flavors to come, but I had to start with brown sugar cinnamon (because it's the best flavor - bite me). These Pop-Tarts are Rory and Lorelai Gilmore approved and are exactly what Buddy the Elf wants on top of his spaghetti.



INGEDIENTS:

For the filling:

1/2 c light brown sugar, packed

2 tbsp AP flour

1 tbsp unsalted butter

pinch salt

1tbsp cinnamon


For the crust:

3 9-inch rolls pre-made pie crust


For the egg wash:

1 egg

1 tbsp water or milk


For the glaze:

1/4 c powdered sugar (plus more as needed)

1/4 tsp vanilla (plus more as needed)

1/4 cinnamon (plus more as needed)

1.4 tsp milk or milk alternative (plus more as needed)


Preheat oven to 360 degrees F. In a bowl, combined light brown sugar, flour, butter, salt, and 1tbsp cinnamon together with a fork until texture resembles sand. Set aside in the fridge to chill. Roll pie crust out thin and cut into 3.5"x5.5" rectangles. Set rectanlges on a baking tray, and add wax paper on top to start a new layer of rectangles as needed to prevent sticking. When all dough has been shaped in to rectangles, set the dough in the fridge to chill for 10 min. In a small dish, combine the egg and water until well combined to make egg wash.

To assemble the Pop-Tarts, place the rectangles on an ungreased baking tray lined with parchment paper. Add 1 tbsp of the brown sugar filling to the center and spread out on a rectangle so that about 1/4" of dough is uncovered on all sides. Brush the egg wash on the uncovered edges of the dough. Place another rectangle on top of the one with the brown sugar and egg wash. Using a fork, crimp the edges together. Using a toothpick, poke 3 rows of 3 holes across the top of the Pop-Tart to vent the steam during the bake. Repeat the the remainder of the rectangles. Set to chill for at least 5 minuts in the fridge. Bake for 15 minutes or until golden brown on the bottom. Cool on wire rack.

While cooling, mix the powdered sugar, vanilla, cinnamon, and milk together to make a glaze. Add more sugar or milk to get desired consistency. Place about 1.5 tsp of glaze on top. Let set.
